About matcha

What is matcha, exactly?+

Matcha is finely ground green tea made from shade-grown leaves (called tencha). Unlike regular green tea where you steep and discard the leaves, with matcha you whisk the powder into water and drink the whole leaf — so you get more antioxidants, more L-theanine, and a much richer flavor.

How is matcha different from green tea?+

Regular green tea is infused — you soak the leaves and drink the water. Matcha is the whole leaf, stone-ground into powder. One cup of matcha has roughly 3× the antioxidants and 5× the L-theanine of a cup of steeped green tea.

What does ceremonial grade mean?+

Ceremonial grade is matcha made from the youngest, shade-grown leaves of the spring harvest — stone-ground at low speed to preserve nutrients. It's smooth and sweet enough to drink with just water. Culinary grade is made from later harvests and is more bitter — meant for lattes, baking, and desserts, not for drinking straight.

Does matcha have caffeine?+

Yes — about 70mg per bowl, similar to a light coffee. But matcha also contains L-theanine, an amino acid that smooths caffeine's edge. The result is calm, sustained focus for 4–6 hours — no jitters, no crash.

Preparation & storage

How do I prepare matcha?+

Sift 1 tsp (about 1.5g) of matcha into a warm bowl. Add 60ml of water at ~80°C (not boiling — it makes matcha bitter). Whisk in "M" or "W" shapes with a bamboo chasen for 15–20 seconds until frothy. For iced or latte versions, first prepare this way then add cold water, milk, or ice.

I don't have a chasen — can I still make matcha?+

Yes. A small electric milk frother works great. A shaker bottle also works: add matcha, water at 80°C, close the lid, shake for 30 seconds. The result won't be quite as silky as a traditional chasen but it's still delicious.

How do I store my matcha?+

Matcha is sensitive to light, heat, and air. Keep the tin tightly sealed in a cool, dark place — or in the fridge for maximum freshness. If refrigerated, bring it to room temperature before opening to prevent condensation. Use within 4–6 weeks of opening for best flavor.

Can I use matcha for cooking or baking?+

You can, but we'd recommend using a culinary-grade matcha for that. Our ceremonial matcha is made for drinking — using it in baking is like cooking with champagne. Save it for the bowl.
